Destination weddings need couple approvals before a block grows, attrition schedules against pickup, bilingual guest pages and emails for Mexico and the Caribbean, and deposits collected in your own Stripe account. Where a service still makes sense
If a couple needs a city they'll never work in again, with no stakes in the guest data, handing it to a booking service is fine. For the resorts an agency lives on, giving up the block means giving up the business.
